Group categories for a reason: a shared trend, similar levels or a useful contrast. If three lines rise but one falls, that difference may be clearer than grouping by their order in the legend.

What if those three rising lines increase by very different amounts? Would putting them together hide that?

It could, if you only say they rose. You can group them and still contrast the size of their increases, or separate the largest change if it dominates the chart.
