This is a great question!
The most basic approach is that when you see the information in the passage, it's False, while if you see nothing about the statement in the passage, it is Not Given.
Most falses are the opposite of the statemens:
The statement: The lesson starts at 8:00 in the morning.
The passage: The lesson starts at 8:30 in the morning.
As you can see, the information is in the passage but given in a false way.

@Aydin, if the passage only says 'in the morning' and the statement says 8am, is that Not Given? The lesson is mentioned but not the time. thats the bit Im unsure about

It would be NOT GIVEN since 8 am is exact time which is not mentioned in the passage. However, if the statement is 8 am, but the passage says "in the morning" that would be TRUE.

@Aydin, did you mean passage says 8am, statement says 'in the morning'? The other way round, we still wouldn't know the time, right?

Yes, with just those sentences: passage '8 am' → statement 'in the morning' is True. Reverse them and it's Not Given.
False needs a contradiction, not just missing detail. That's in the IELTS Reading guide.
